Crispy Chipotle Butter Mushroom Bites

Ingredients

- 75g fan oyster mushrooms (or any mushroom of choice)
- 2 tablespoons corn flour
- 3 tablespoons plain flour
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- 1 tablespoon Charred Tomato Chipotle Butter
- 1 tablespoon water


Method

    1. Preheat your air fryer to 190°C (375°F).
    2. Clean the mushrooms and separate them into bite-sized pieces. Place them in a large mixing bowl.
    3. Add 1 tablespoon of water to the mushrooms and toss gently. This will help the flour mixture stick better.
    4. In a separate bowl, mix together the corn flour, plain flour, salt, and pepper.
    5. Sprinkle the flour mixture over the dampened mushrooms and toss to coat evenly. Make sure each piece is well-covered.
    6. Drizzle the vegetable oil over the coated mushrooms and mix gently to distribute the oil.
    7. Place the coated mushrooms in the air fryer basket in a single layer, leaving space between pieces for air circulation. You may need to cook in batches depending on the size of your air fryer.
    8. Air fry at 190°C for 15 minutes, shaking the basket halfway through cooking time to ensure even crisping.
    9. While the mushrooms are cooking, melt the charred tomato chipotle butter in a microwave-safe bowl or in a small saucepan.
    10. Once the mushrooms are crispy and golden brown, remove them from the air fryer and place them in a large bowl.
    11. Pour the melted chipotle butter over the hot mushrooms and toss gently to coat evenly.
    12. Serve immediately while warm.
