Day-After Christmas Turkey & Fig Sourdough

Ingredients

1 small 6-inch sourdough loaf 
2 tbsp White Chocolate Beurre Blanc Butter Leftover roasted turkey, sliced (or deli turkey if preferred)
2 figs, thinly sliced A handful of rocket or mixed greens
2 tbsp olive oil Mustard, to taste Salt and black pepper

Method

  1. Lightly dress the rocket or mixed greens with olive oil, salt, and black pepper. Toast the sourdough if you like a warm base.
  2. Split the loaf and spread mustard on the top half; spread White Chocolate Beurre Blanc Butter on the bottom.
  3. Layer the sandwich with slices of leftover turkey, the dressed greens, and the fresh figs on top.
  4. Close gently and serve as a simple, bright post-holiday lunch.
