Japanese Egg Sandwich (Tamago Sando)

Serves 1



2 hard boiled eggs

3 tbsp mayonnaise (Japanese mayo preferred)

2 tsp Meraki Kombu / Mala Butter, softened

½ small red onion, finely diced

1 tbsp lemon juice

2 pc of white bread



Egg Mayo

  1. Mix lemon juice with onion, set aside.
  2. Finely dice one egg, mix with mayonnaise, onion and butter.


  1. Slice the second egg in half, lengthwise.
  2. Butter one side of each bread and top them with a thin layer of egg mayo.
  3. Place the halved eggs on top and cover with the other bread.
